Grilled chicken and carrots with Mixed Green salad

Great healthy recipe for lunch or dinner. The is a single serving (approx 400 calories). So double or triple the recipe if you are morning more or want leftovers.
Ingredients
- 4 oz Raw boneless skinless chicken breast
- 1/2 cup Boiled carrots
- 2 tsp Extra-virgin olive oil
- 3/4 cup Cooked long grain brown rice
Instructions
- Preheat grill and grill chicken until fully cooked.
- Serve with carrots and rice.
- Drizzle the chicken and carrots with olive oil.
- 2 cups mixed green salad with 2 Tbs. low fat Zesty Italian dressing or a balsamic vinaigrette.
