Grilled chicken and carrots with Mixed Green salad

Great healthy recipe for lunch or dinner. The is a single serving (approx 400 calories). So double or triple the recipe if you are morning more or  want leftovers.


  • 4 oz Raw boneless skinless chicken breast
  • 1/2 cup Boiled carrots
  • 2 tsp Extra-virgin olive oil
  • 3/4 cup Cooked long grain brown rice


  1. Preheat grill and grill chicken until fully cooked.
  2. Serve with carrots and rice.
  3. Drizzle the chicken and carrots with olive oil.
  4. 2 cups mixed green salad with 2 Tbs. low fat Zesty Italian dressing or a balsamic vinaigrette.
