Snack CUCUMBER SANDWICH

Approx 200 calories. This is a great mid morning and mid afternoon snack:)

Ingredients:

  • 2 cup Cucumber, with peel
    1/2 avocado(s) Avocado
    6 cherry(ies) Red cherry tomato
    1/4 fruit(s) Lime
    1/4 tsp Sea salt
    1/4 tsp Cayenne pepper (Spice Islands)
    1 tbsp Fresh basil

Instructions

  1. Buy one cucumber(ignore 2cup measurement).  Wash and Peel the cucumber if desired.
  2. Cut cucumber lengthwise, in half. You now have two long “boats”. With a spoon, scoop out the inner (soft) part of the cucumber.
  3. Put all other ingredients in a bowl. Mix gently.
  4. Fill the inner part of the cucumber with the avocado mixture.
  5. Eat as “boats” or put the other (empty) half of the cucumber on top of the filled one to make a sandwich.
